    Ingredients:

    • 450g Oxtail
    • 1 chopped Onion
    • 1 Spring Onions
    • 2 cloves minced Garlic
    • 1 tsp Ginger
    • 1 chopped Scotch Bonnet
    • 2 tbs Soy Sauce
    • 1 chopped Fresh Thyme
    • 2 tbs Vegetable Oil
    • 350ml Water
    • 200g Broad Beans
    • 1 tbs Corn Flour
    • 2 tbs Water

    Instructions:

    Toss the oxtail with the onion, spring onion, garlic, ginger, chilli, soy sauce, thyme, salt and pepper. Heat the vegetable oil in a large frying pan over medium-high heat. Brown the oxtail in the pan until browned all over, about 10 minutes. Place into a pressure cooker, and pour in 375ml water. Cook at pressure for 25 minutes, then remove from heat, and remove the lid according to manufacturer's directions.
    Add the broad beans and pimento berries, and bring to a simmer over medium-high heat. Dissolve the cornflour in 2 tablespoons water, and stir into the simmering oxtail. Cook and stir a few minutes until the sauce has thickened, and the broad beans are tender.

  • Croatian Bean Stew

    Ingredients:

    • 2 cans Cannellini Beans
    • 3 tbs Vegetable Oil
    • 2 cups Tomatoes
    • 5 Challots
    • 2 cloves Garlic
    • Pinch Parsley
    • 1/2 kg chopped Chorizo

    Instructions:

    Heat the oil in a pan. Add the chopped vegetables and sauté until tender. Take a pot, empty the beans together with the vegetables into it, put the sausages inside and cook for further 20 minutes on a low heat. Or, put it in an oven and bake it at a temperature of 180ºC/350ºF for 30 minutes. This dish is even better reheated the next day.

  • Peanut Butter Cheesecake

    Peanut Butter Cheesecake

    • 50g Butter
    • 175g Peanut Cookies
    • 5 Gelatine Leafs
    • 500g Ricotta
    • 175g Peanut Butter
    • 175g Golden Syrup
    • 150ml Milk
    • 275ml Double Cream
    • 2 tblsp Light Brown Soft Sugar
    • Crushed Peanut Brittle

    Instructions:

    Oil and line a 20cm round loose- bottomed cake tin with cling film, making it as smooth as possible. Melt the butter in a pan. Crush the biscuits by bashing them in a bag with a rolling pin, then stir them into the butter until very well coated. Press the mixture firmly into the base of the tin and chill.
    Soak the gelatine in water while you make the filling. Tip the ricotta into a bowl, then beat in the peanut butter and syrup. Ricotta has a slightly grainy texture so blitz until smooth with a stick blender for a smoother texture if you prefer.
    Take the soaked gelatine from the water and squeeze dry. Put it into a pan with the milk and heat very gently until the gelatine dissolves. Beat into the peanut mixture, then tip onto the biscuit base. Chill until set.
    To freeze, leave in the tin and as soon as it is solid, cover the surface with cling film, then wrap the tin with cling film and foil.
    To defrost, thaw in the fridge overnight.
    To serve, carefully remove from the tin. Whisk the cream with the sugar until it holds its shape, then spread on top of the cheesecake and scatter with the peanut brittle.

  • Chicken Enchilada Casserole

    Chicken Enchilada Casserole

    Ingredients:

    • 14 oz jar Enchilada sauce
    • 3 Cups shredded Monterey Jack cheese
    • 6 corn tortillas
    • 2 chicken breasts

    Instructions:

    Cut each chicken breast in about 3 pieces, so that it cooks faster and put it in a small pot. Pour Enchilada sauce over it and cook covered on low to medium heat until chicken is cooked through, about 20 minutes. No water is needed, the chicken will cook in the Enchilada sauce. Make sure you stir occasionally so that it doesn't stick to the bottom.
    Remove chicken from the pot and shred with two forks.
    Preheat oven to 375 F degrees.
    Start layering the casserole. Start with about ¼ cup of the leftover Enchilada sauce over the bottom of a baking dish. I used a longer baking dish, so that I can put 2 corn tortillas across. Place 2 tortillas on the bottom, top with ⅓ of the chicken and ⅓ of the remaining sauce. Sprinkle with ⅓ of the cheese and repeat starting with 2 more tortillas, then chicken, sauce, cheese. Repeat with last layer with the remaining ingredients, tortillas, chicken, sauce and cheese.
    Bake for 20 to 30 minutes uncovered, until bubbly and cheese has melted and started to brown on top.
    Serve warm.

    Ingredients:

    • 5 tablespoons Olive Oil
    • 1 chopped Onion
    • 1 chopped Carrots
    • 1 stalk chopped Celery
    • 1 tablespoon minced Garlic
    • 2 cups Cannellini Beans
    • 1 Canned tomatoes
    • 4 cups Water
    • 1 fresh sprig Rosemary
    • 1 fresh sprig Thyme
    • 1 pound chopped Kale
    • 4 thick slices Wholegrain Bread
    • 1 thinly sliced Red Onions
    • ½ cup freshly grated Parmesan

    Instructions:

    Put 2 tablespoons of the oil in a large pot over medium heat. When it’s hot, add onion, carrot, celery and garlic; sprinkle with salt and pepper and cook, stirring occasionally, until vegetables are soft, 5 to 10 minutes.
    Heat the oven to 500 degrees. Drain the beans; if they’re canned, rinse them as well. Add them to the pot along with tomatoes and their juices and stock, rosemary and thyme. Bring to a boil, then reduce heat so the soup bubbles steadily; cover and cook, stirring once or twice to break up the tomatoes, until the flavors meld, 15 to 20 minutes.
    Fish out and discard rosemary and thyme stems, if you like, and stir in kale. Taste and adjust seasoning. Lay bread slices on top of the stew so they cover the top and overlap as little as possible. Scatter red onion slices over the top, drizzle with the remaining 3 tablespoons oil and sprinkle with Parmesan.
    Put the pot in the oven and bake until the bread, onions and cheese are browned and crisp, 10 to 15 minutes. (If your pot fits under the broiler, you can also brown the top there.) Divide the soup and bread among 4 bowls and serve.

    • 1 1/2 cups Brown Lentils
    • 1 1/2 cups Rice
    • 1/2 tsp Coriander
    • 2 cups Macaroni
    • Can Chickpeas
    • 1 large Onion
    • Sprinking Salt
    • 1/2 cup Vegetable Oil

    Instructions:

    Cook the lentils. Bring lentils and 4 cups of water to a boil in a medium pot or saucepan over high heat. Reduce the heat to low and cook until lentils are just tender (15-17 minutes). Drain from water and season with a little salt. (Note: when the lentils are ready, they should not be fully cooked. They should be only par-cooked and still have a bite to them as they need to finish cooking with the rice).
    Now, for the rice. Drain the rice from its soaking water. Combine the par-cooked lentils and the rice in the saucepan over medium-high heat with 1 tbsp cooking oil, salt, pepper, and coriander. Cook for 3 minutes, stirring regularly. Add warm water to cover the rice and lentil mixture by about 1 1/2 inches (you’ll probably use about 3 cups of water here). Bring to a boil; the water should reduce a bit. Now cover and cook until all the liquid has been absorbed and both the rice and lentils are well cooked through (about 20 minutes). Keep covered and undisturbed for 5 minutes or so.
    Now make the pasta. While the rice and lentils are cooking, make the pasta according to package instructions by adding the elbow pasta to boiling water with a dash of salt and a little oil. Cook until the pasta is al dente. Drain.
    Cover the chickpeas and warm in the microwave briefly before serving.

    Make the crispy onion topping.

    Sprinkle the onion rings with salt, then toss them in the flour to coat. Shake off excess flour.
    In a large skillet, heat the cooking oil over medium-high heat, cook the onion rings, stirring often, until they turn a nice caramelized brown. Onions must be crispy, but not burned (15-20 minutes).

  • Tonkatsu pork

    • 4 Pork Chops
    • 100g Flour
    • 2 Beaten Eggs
    • 100g Breadcrumbs
    • Fry Vegetable Oil
    • 2 tbs Tomato Ketchup
    • 2 tbs Worcestershire Sauce
    • 1 tbs Oyster Sauce
    • 2 tblsp Caster Sugar

    Instructions:

    STEP 1
    Remove the large piece of fat on the edge of each pork loin, then bash each of the loins between two pieces of baking parchment until around 1cm in thickness – you can do this using a meat tenderiser or a rolling pin. Once bashed, use your hands to reshape the meat to its original shape and thickness – this step will ensure the meat is as succulent as possible.

    STEP 2
    Put the flour, eggs and panko breadcrumbs into three separate wide-rimmed bowls. Season the meat, then dip first in the flour, followed by the eggs, then the breadcrumbs.

    STEP 3
    In a large frying or sauté pan, add enough oil to come 2cm up the side of the pan. Heat the oil to 180C – if you don’t have a thermometer, drop a bit of panko into the oil and if it sinks a little then starts to fry, the oil is ready. Add two pork chops and cook for 1 min 30 secs on each side, then remove and leave to rest on a wire rack for 5 mins. Repeat with the remaining pork chops.

    STEP 4
    While the pork is resting, make the sauce by whisking the ingredients together, adding a splash of water if it’s particularly thick. Slice the tonkatsu and serve drizzled with the sauce.

    • 1 tbs Butter
    • 4 Bacon
    • 1 finely sliced Onion
    • 1 chopped Garlic Clove
    • 20 Brussels Sprouts
    • 400g Potatoes

    Instructions:

    Melt the fat in a non-stick pan, allow it to get nice and hot, then add the bacon. As it begins to brown, add the onion and garlic. Next, add the sliced sprouts or cabbage and let it colour slightly. All this will take 5-6 mins.
    Next, add the potato. Work everything together in the pan and push it down so that the mixture covers the base of the pan – allow the mixture to catch slightly on the base of the pan before turning it over and doing the same again. It’s the bits of potato that catch in the pan that define the term ‘bubble and squeak’, so be brave and let the mixture colour. Cut into wedges and serve.

    • 1.5kg Chicken
    • 25g Butter
    • 6 tblsp Olive Oil
    • 2 sliced Red Onions
    • 3 Large Red Pepper
    • 130g Chorizo
    • 8 Sun-Dried Tomatoes
    • 6 cloves sliced Garlic
    • 300g Basmati Rice
    • drizzle Tomato Puree
    • ½ tsp Paprika
    • 4 Bay Leaves
    • Handful Thyme
    • 350ml Chicken Stock
    • 180g Dry White Wine
    • 2 Lemons
    • 100g Black Olives
    • to serve Salt
    • to serve Pepper

    Instructions:

    Preheat the oven to 180°C/Gas mark 4. Have the chicken joints ready to cook. Heat the butter and 3 tbsp olive oil in a flameproof casserole or large frying pan. Brown the chicken pieces in batches on both sides, seasoning them with salt and pepper as you go. Don't crowd the pan – fry the chicken in small batches, removing the pieces to kitchen paper as they are done.

    Add a little more olive oil to the casserole and fry the onions over a medium heat for 10 minutes, stirring frequently, until softened but not browned. Add the rest of the oil, then the peppers and cook for another 5 minutes.

    Add the chorizo, sun-dried tomatoes and garlic and cook for 2-3 minutes. Add the rice, stirring to ensure it is well coated in the oil. Stir in the tomato paste, paprika, bay leaves and chopped thyme. Pour in the stock and wine. When the liquid starts to bubble, turn the heat down to a gentle simmer. Press the rice down into the liquid if it isn't already submerged and place the chicken on top. Add the lemon wedges and olives around the chicken.

    Cover and cook in the oven for 50 minutes. The rice should be cooked but still have some bite, and the chicken should have juices that run clear when pierced in the thickest part with a knife. If not, cook for another 5 minutes and check again.
