    Beef and Mustard Pie

    Ingredients:

    • 1kg Beef
    • 2 tbs Plain Flour
    • 2 tbs Rapeseed Oil
    • 200ml Red Wine
    • 400ml Beef Stock
    • 1 finely sliced Onion
    • 2 chopped Carrots
    • 3 sprigs Thyme
    • 2 tbs Mustard
    • 2 free-range Egg Yolks
    • 400g Puff Pastry
    • 300g Green Beans
    • 25g Butter
    • pinch Salt
    • pinch Pepper

    Instructions:

    Preheat the oven to 150C/300F/Gas 2.
    Toss the beef and flour together in a bowl with some salt and black pepper.
    Heat a large casserole until hot, add half of the rapeseed oil and enough of the beef to just cover the bottom of the casserole.
    Fry until browned on each side, then remove and set aside. Repeat with the remaining oil and beef.
    Return the beef to the pan, add the wine and cook until the volume of liquid has reduced by half, then add the stock, onion, carrots, thyme and mustard, and season well with salt and pepper.
    Cover with a lid and place in the oven for two hours.
    Remove from the oven, check the seasoning and set aside to cool. Remove the thyme.
    When the beef is cool and you're ready to assemble the pie, preheat the oven to 200C/400F/Gas 6.
    Transfer the beef to a pie dish, brush the rim with the beaten egg yolks and lay the pastry over the top. Brush the top of the pastry with more beaten egg.
    Trim the pastry so there is just enough excess to crimp the edges, then place in the oven and bake for 30 minutes, or until the pastry is golden-brown and cooked through.
    For the green beans, bring a saucepan of salted water to the boil, add the beans and cook for 4-5 minutes, or until just tender.
    Drain and toss with the butter, then season with black pepper.
    To serve, place a large spoonful of pie onto each plate with some green beans alongside.

  • Mushroom & Chestnut Rotolo

    Mushroom & Chestnut Rotolo

    • 30g Mushrooms
    • 240g Chestnuts
    • 3 Challots
    • 3 cloves Garlic
    • 3 sprigs Rosemary
    • 500g Wild Mushrooms
    • 2 tblsp Soy Sauce
    • 125ml White Wine
    • 350g Lasagne Sheets
    • 4 tbsp Breadcrumbs
    • 1/2 handful Sage
    • to serve Truffle Oil

    Instructions:

    Soak the dried mushrooms in 350ml boiling water and set aside until needed. Blitz ¾ of the chestnuts with 150ml water until creamy. Roughly chop the remaining chestnuts.
    Heat 2 tbsp olive oil in a large non-stick frying pan. Fry the shallots with a pinch of salt until softened, then add the garlic, chopped chestnuts and rosemary, and fry for 2 mins more. Add the wild mushrooms, 2 tbsp oil and some seasoning. Cook for 3 mins until they begin to soften. Drain and roughly chop the dried mushrooms (reserve the soaking liquid), then add those too, along with the soy sauce, and fry for 2 mins more.
    Whisk the wine, reserved mushroom liquid and chestnut cream together to create a sauce. Season, then add half to the mushroom mixture in the pan and cook for 1 min until the sauce becomes glossy. Remove and discard the rosemary sprigs, then set the mixture aside.
    Heat oven to 180C/160C fan/gas 4. Bring a large pan of salted water to the boil and get a large bowl of ice water ready. Drop the lasagne sheets into the boiling water for 2 mins or until pliable and a little cooked, then immediately plunge them into the cold water. Using your fingers, carefully separate the sheets and transfer to a clean tea towel. Spread a good spoonful of the sauce on the bottom two thirds of each sheet, then, rolling away from yourself, roll up the shorter ends. Cut each roll in half, then position the rolls of pasta cut-side up in a pie dish that you are happy to serve from at the table. If you have any mushroom sauce remaining after you’ve rolled up all the sheets, simply push it into some of the exposed rolls of pasta.
    Pour the rest of the sauce over the top of the pasta, then bake for 10 mins or until the pasta no longer has any resistance when tested with a skewer.
    Meanwhile, put the breadcrumbs, the last 2 tbsp olive oil, sage leaves and some seasoning in a bowl, and toss everything together. Scatter the rotolo with the crumbs and sage, then bake for another 10 mins, until the top is golden and the sage leaves are crispy. Leave to cool for 10 mins to allow the pasta to absorb the sauce, then drizzle with a little truffle oil, if you like, before taking your dish to the table.

  • Apple Frangipan Tart

    • 175g/6oz digestive biscuits
    • 75g/3oz butter
    • 200g/7oz Bramley apples
    • 75g/3oz Salted Butter
    • 75g/3oz caster sugar
    • 2 free-range eggs, beaten
    • 75g/3oz ground almonds
    • 1 tsp almond extract
    • 50g/1¾oz flaked almonds

    Instructions:

    Preheat the oven to 200C/180C Fan/Gas 6.
    Put the biscuits in a large re-sealable freezer bag and bash with a rolling pin into fine crumbs. Melt the butter in a small pan, then add the biscuit crumbs and stir until coated with butter. Tip into the tart tin and, using the back of a spoon, press over the base and sides of the tin to give an even layer. Chill in the fridge while you make the filling.
    Cream together the butter and sugar until light and fluffy. You can do this in a food processor if you have one. Process for 2-3 minutes. Mix in the eggs, then add the ground almonds and almond extract and blend until well combined.
    Peel the apples, and cut thin slices of apple. Do this at the last minute to prevent the apple going brown. Arrange the slices over the biscuit base. Spread the frangipane filling evenly on top. Level the surface and sprinkle with the flaked almonds.
    Bake for 20-25 minutes until golden-brown and set.
    Remove from the oven and leave to cool for 15 minutes. Remove the sides of the tin. An easy way to do this is to stand the tin on a can of beans and push down gently on the edges of the tin.
    Transfer the tart, with the tin base attached, to a serving plate. Serve warm with cream, crème fraiche or ice cream.

    • 5 tablespoons Olive Oil
    • 1 chopped Onion
    • 1 chopped Carrots
    • 1 stalk chopped Celery
    • 1 tablespoon minced Garlic
    • 2 cups Cannellini Beans
    • 1 Canned tomatoes
    • 4 cups Water
    • 1 fresh sprig Rosemary
    • 1 fresh sprig Thyme
    • 1 pound chopped Kale
    • 4 thick slices Wholegrain Bread
    • 1 thinly sliced Red Onions
    • ½ cup freshly grated Parmesan

    Instructions:

    Put 2 tablespoons of the oil in a large pot over medium heat. When it’s hot, add onion, carrot, celery and garlic; sprinkle with salt and pepper and cook, stirring occasionally, until vegetables are soft, 5 to 10 minutes.
    Heat the oven to 500 degrees. Drain the beans; if they’re canned, rinse them as well. Add them to the pot along with tomatoes and their juices and stock, rosemary and thyme. Bring to a boil, then reduce heat so the soup bubbles steadily; cover and cook, stirring once or twice to break up the tomatoes, until the flavors meld, 15 to 20 minutes.
    Fish out and discard rosemary and thyme stems, if you like, and stir in kale. Taste and adjust seasoning. Lay bread slices on top of the stew so they cover the top and overlap as little as possible. Scatter red onion slices over the top, drizzle with the remaining 3 tablespoons oil and sprinkle with Parmesan.
    Put the pot in the oven and bake until the bread, onions and cheese are browned and crisp, 10 to 15 minutes. (If your pot fits under the broiler, you can also brown the top there.) Divide the soup and bread among 4 bowls and serve.

    • 1/2 cup coco sugar
    • 1/3 cup raw cacao
    • 1 tsp baking powder
    • 2 flax eggs
    • 1/2 cup almond milk
    • 1 tsp vanilla
    • 1/2 cup boiling water

    Instructions:

    Simply mix all dry ingredients with wet ingredients and blend altogether. Bake for 45 min on 180 degrees. Decorate with some melted vegan chocolate

  • Salmon Prawn Risotto

    Salmon Prawn Risotto

    Ingredients:

    • 50g/2oz butter
    • 1 finely chopped onion
    • 150g rice
    • 125ml white wine
    • 1 litre hot vegetable stock
    • The juice and zest of one lemon
    • 240g large King Prawns
    • 150g salmon
    • 100g tips blanched briefly in boiling water asparagus
    • ground black pepper
    • 50g shavings Parmesan

    Instructions:

    Melt the butter in a thick-based pan and gently cook the onion without colour until it is soft.
    Add the rice and stir to coat all the grains in the butter
    Add the wine and cook gently stirring until it is absorbed
    Gradually add the hot stock, stirring until each addition is absorbed. Keep stirring until the rice is tender
    Season with the lemon juice and zest, and pepper to taste. (there will probably be sufficient saltiness from the salmon to not need to add salt) Stir gently to heat through
    Serve scattered with the Parmesan and seasonal vegetables.
    Grill the salmon and gently place onto the risotto with the prawns and asparagus

  • Jerk chicken with rice & peas

    • 12 Chicken Thighs
    • 1/2 Lime
    • 1 bunch Spring Onions
    • 1 tbs chopped Ginger
    • 3 cloves Garlic
    • 1/2 Onion
    • 3 chopped Red Chilli
    • 1/2 teaspoon Thyme
    • Juice of 1 Lime
    • 2 tbs Soy Sauce
    • 2 tbs Vegetable Oil
    • 3 tbs Brown Sugar
    • 1 tbs Allspice
    • 200g Basmati Rice
    • 400g Coconut Milk
    • 1 bunch Spring Onions
    • 2 sprigs Thyme
    • 2 cloves chopped Garlic
    • 1 tbs Allspice
    • 800g Kidney Beans

    Instructions:

    To make the jerk marinade, combine all the ingredients in a food processor along with 1 tsp salt, and blend to a purée. If you’re having trouble getting it to blend, just keep turning off the blender, stirring the mixture, and trying again. Eventually it will start to blend up – don’t be tempted to add water, as you want a thick paste.

    Taste the jerk mixture for seasoning – it should taste pretty salty, but not unpleasantly, puckering salty. You can now throw in more chillies if it’s not spicy enough for you. If it tastes too salty and sour, try adding in a bit more brown sugar until the mixture tastes well balanced.

    Make a few slashes in the chicken thighs and pour the marinade over the meat, rubbing it into all the crevices. Cover and leave to marinate overnight in the fridge.

    If you want to barbecue your chicken, get the coals burning 1 hr or so before you’re ready to cook. Authentic jerked meats are not exactly grilled as we think of grilling, but sort of smoke-grilled. To get a more authentic jerk experience, add some wood chips to your barbecue, and cook your chicken over slow, indirect heat for 30 mins. To cook in the oven, heat to 180C/160C fan/gas 4. Put the chicken pieces in a roasting tin with the lime halves and cook for 45 mins until tender and cooked through.

    While the chicken is cooking, prepare the rice & peas. Rinse the rice in plenty of cold water, then tip it into a large saucepan with all the remaining ingredients except the kidney beans. Season with salt, add 300ml cold water and set over a high heat. Once the rice begins to boil, turn it down to a medium heat, cover and cook for 10 mins.

    Add the beans to the rice, then cover with a lid. Leave off the heat for 5 mins until all the liquid is absorbed. Squeeze the roasted lime over the chicken and serve with the rice & peas, and some hot sauce if you like it really spicy.

  • Chicken Enchilada Casserole

    Chicken Enchilada Casserole

    • 14 oz jar Enchilada sauce
    • 3 Cups shredded Monterey Jack cheese
    • 6 corn tortillas
    • 2 chicken breasts

    Instructions:

    Cut each chicken breast in about 3 pieces, so that it cooks faster and put it in a small pot. Pour Enchilada sauce over it and cook covered on low to medium heat until chicken is cooked through, about 20 minutes. No water is needed, the chicken will cook in the Enchilada sauce. Make sure you stir occasionally so that it doesn't stick to the bottom.
    Remove chicken from the pot and shred with two forks.
    Preheat oven to 375 F degrees.
    Start layering the casserole. Start with about ¼ cup of the leftover Enchilada sauce over the bottom of a baking dish. I used a longer baking dish, so that I can put 2 corn tortillas across. Place 2 tortillas on the bottom, top with ⅓ of the chicken and ⅓ of the remaining sauce. Sprinkle with ⅓ of the cheese and repeat starting with 2 more tortillas, then chicken, sauce, cheese. Repeat with last layer with the remaining ingredients, tortillas, chicken, sauce and cheese.
    Bake for 20 to 30 minutes uncovered, until bubbly and cheese has melted and started to brown on top.
    Serve warm.

    • ½ cup Butter
    • 1 cup Sugar
    • 2 Eggs
    • 1 tsp Vanilla Extract
    • 2 cups Flour
    • 1 tsp Baking Powder
    • 1 1/4 cup Milk
    • 1 1/2 cup Maple Syrup
    • 1 1/2 cup Brown Sugar
    • 1 1/2 cup Single Cream
    • 1/3 cup Butter

    Instructions:

    In a large bowl, with an electric mixer, mix the butter and sugar till the mix is light.
    Add eggs and vanilla and mix.
    In another bowl, mix flour and baking powder.
    Alternate flour mix and milk to the butter mix.
    Pour into a 13 inch by 9 inch greased pan.
    MAPLE SAUCE.
    In a large casserole, bring to boil the syrup, brown sugar, cream and butter and constantly stir.
    Reduce heat and and gently cook 2 minutes or till sauce has reduced a little bit.
    Pour sauce gently over cake.
    Bake at 325°f (160°c) about 35 minutes or till cake is light brown and when toothpick inserted comes out clean.

    • 450g Salt Cod
    • 400g Ackee
    • 1 chopped Onion
    • 1 tsp Paprika
    • 2 tsp Curry Powder
    • 2 tsp Jerusalem Artichokes
    • 1 tsp Hotsauce
    • 1 sliced Red Pepper
    • 1 sliced Yellow Pepper
    • 200g Tomatoes
    • to taste Salt
    • to taste Pepper
    • 250g Self-raising Flour
    • 30g Suet
    • pinch Salt
    • for frying Olive Oil

    Instructions:

    For the saltfish, soak the salt cod overnight, changing the water a couple of times.
    Drain, then put the cod in a large pan of fresh water and bring to the boil. Drain again, add fresh water and bring to the boil again.
    Simmer for about five minutes, or until cooked through, then drain and flake the fish into large pieces. Discard any skin or bones.
    For the dumplings, mix the flour and suet with a pinch of salt and 250ml/9fl oz water to make a dough.
    Wrap the mixture in clingfilm and leave in the fridge to rest.
    Open the can of ackee, drain and rinse, then set aside.
    Heat a tablespoon of olive oil in a pan and fry the onion until softened but not brown.
    Add the spices, seasoning, pepper sauce and sliced peppers and continue to fry until the peppers are tender.
    Add the chopped tomatoes, then the salt cod and mix together. Lastly stir in the ackee very gently and leave to simmer until ready to serve.
    When you’re almost ready to eat, heat about 1cm/½in vegetable oil in a frying pan and heat until just smoking.
    Shape the dumpling mix into plum-size balls and shallow-fry until golden-brown. (CAUTION: hot oil can be dangerous. Do not leave the pan unattended.)
    Drain the dumplings on kitchen paper and serve with the saltfish and ackee.
