    Ingredients:

    • 1 large Aubergine
    • ½ cup Onion
    • 1 cup Tomatoes
    • 6 cloves Garlic
    • 1 Green Chilli
    • ¼ teaspoon Red Chilli Powder
    • 1.5 tablespoon Oil
    • 1 tablespoon chopped Coriander Leaves
    • as required salt

    Instructions:

    Rinse the baingan (eggplant or aubergine) in water. Pat dry with a kitchen napkin. Apply some oil all over and
    keep it for roasting on an open flame. You can also grill the baingan or roast in the oven. But then you won't get
    the smoky flavor of the baingan. Keep the eggplant turning after a 2 to 3 minutes on the flame, so that its evenly
    cooked. You could also embed some garlic cloves in the baingan and then roast it.
    2. Roast the aubergine till its completely cooked and tender. With a knife check the doneness. The knife should slid
    easily in aubergines without any resistance. Remove the baingan and immerse in a bowl of water till it cools
    down.
    3. You can also do the dhungar technique of infusing charcoal smoky flavor in the baingan. This is an optional step.
    Use natural charcoal for this method. Heat a small piece of charcoal on flame till it becomes smoking hot and red.
    4. Make small cuts on the baingan with a knife. Place the red hot charcoal in the same plate where the roasted
    aubergine is kept. Add a few drops of oil on the charcoal. The charcoal would begin to smoke.
    5. As soon as smoke begins to release from the charcoal, cover the entire plate tightly with a large bowl. Allow the
    charcoal smoke to get infused for 1 to 2 minutes. The more you do, the more smoky the baingan bharta will
    become. I just keep for a minute. Alternatively, you can also do this dhungar method once the baingan bharta is
    cooked, just like the way we do for Dal Tadka.
    6. Peel the skin from the roasted and smoked eggplant.
    7. Chop the cooked eggplant finely or you can even mash it.
    8. In a kadai or pan, heat oil. Then add finely chopped onions and garlic.
    9. Saute the onions till translucent. Don't brown them.
    10. Add chopped green chilies and saute for a minute.
    11. Add the chopped tomatoes and mix it well.
    12. Bhuno (saute) the tomatoes till the oil starts separating from the mixture.
    13. Now add the red chili powder. Stir and mix well.
    14. Add the chopped cooked baingan.
    15. Stir and mix the chopped baingan very well with the onion­tomato masala mixture.
    16. Season with salt. Stir and saute for some more 4 to 5 minutes more.
    17. Finally stir in the coriander leaves with the baingan bharta or garnish it with them. Serve Baingan Bharta with
    phulkas, rotis or chapatis. It goes well even with bread, toasted or grilled bread and plain rice or jeera rice.

  • Treacle Tart

    • 250g Plain Flour
    • 135g Butter
    • 400g Golden Syrup
    • 150g Breadcrumbs
    • Zest of 2 Lemons
    • 1 beaten Eggs

    Instructions:

    First make the short crust pastry: measure the flour into a large bowl and rub in the butter with your fingertips until the mixture resembles fine breadcrumbs (alternatively, this can be done in a food processor). Add about three tablespoons of cold water and mix to a firm dough, wrap in cling film and chill in the fridge for about 20 minutes.
    Preheat the oven to 200C/400F/Gas 6 and put a heavy baking tray in the oven to heat up. Grease a deep 18cm/7in loose-bottomed fluted flan tin with butter.
    Remove about 150g/5½oz of pastry from the main ball and set aside for the lattice top.
    Roll the rest of the pastry out thinly on a lightly floured work surface and line the prepared flan tin with the pastry.
    Prick the base with a fork, to stop the base rising up during baking.
    Place the reserved pastry for the lattice top on cling film and roll out thinly. Egg wash the pastry and set aside to chill in the fridge (the cling film makes it easier to move about). Do not cut into strips at this stage. Do not egg wash the strips once they are on the tart as it will drip into the treacle mixture.
    To make the filling, heat the syrup gently in a large pan but do not boil.
    Once melted, add the breadcrumbs, lemon juice and zest to the syrup. (You can add less lemon if you would prefer less citrus taste.) If the mixture looks runny, add a few more breadcrumbs.
    Pour the syrup mixture into the lined tin and level the surface.
    Remove the reserved pastry from the fridge and cut into long strips, 1cm/½in wide. Make sure they are all longer than the edges of the tart tin.
    Egg wash the edge of the pastry in the tin, and start to make the woven laying lattice pattern over the mixture, leave the strips hanging over the edge of the tin.
    Once the lattice is in place, use the tin edge to cut off the strips by pressing down with your hands, creating a neat finish.
    Bake on the pre-heated baking tray in the hot oven for about 10 minutes until the pastry has started to colour, and then reduce the oven temperature to 180C/350F/Gas 4. If at this stage the lattice seems to be getting too dark brown, cover the tart with tin foil.
    Bake for a further 25-30 minutes until the pastry is golden-brown and the filling set.
    Remove the tart from the oven and leave to firm up in the tin. Serve warm or cold.

  • French Onion Chicken with Roasted Carrots & Mashed Potatoes

    French Onion Chicken with Roasted Carrots & Mashed Potatoes

    • 2 Chicken Breasts
    • 12 ounces Carrots
    • 5 Potatoes
    • 1 Onion
    • 1 Beef Stock
    • 1 1/2 cup Mozzarella
    • 2 tbsp Sour Cream
    • Butter
    • Sugar
    • Vegetable Oil
    • Salt
    • Pepper

    Instructions:

    Preheat oven to 425 degrees. Wash and dry all produce. Trim, peel, and cut carrots on a diagonal into ¼-inch-thick pieces. Dice potatoes into ½-inch pieces. Halve, peel, and thinly slice onion.

    Toss carrots on a baking sheet with a drizzle of oil, salt, and pepper. Roast until browned and tender, 15-20 minutes.

    Meanwhile, place potatoes in a medium pot with enough salted water to cover by 2 inches. Bring to a boil and cook until tender, 12-15 minutes. Drain and return potatoes to pot; cover to keep warm.

    While potatoes cook, heat a drizzle of oil in a large pan over medium-high heat. Add onion and cook, stirring occasionally, until lightly browned and softened, 8-10 minutes. Sprinkle with 1 tsp sugar (2 tsp for 4 servings). Stir in stock concentrate and 2 TBSP water (¼ cup for 4); season with salt and pepper. Cook until jammy, 2-3 minutes more. Turn off heat; transfer to a small bowl. Wash out pan.

    Pat chicken dry with paper towels; season all over with salt and pepper. Heat a drizzle of oil in pan used for onion over medium-high heat. Add chicken and cook until browned and cooked through, 5-6 minutes per side. In the last 1-2 minutes of cooking, top with caramelized onion and cheese. Cover pan until cheese melts. (If your pan doesn’t have a lid, cover with a baking sheet!)

    Heat pot with drained potatoes over low heat; mash with sour cream, 2 TBSP butter (4 TBSP for 4 servings), salt, pepper, and a splash of water (or milk, for extra richness) until smooth. Divide chicken, roasted carrots, and mashed potatoes between plates.

    • 2 Sausages

    • 2 Mushrooms
    • 2 Tomatoes
    • 1 Slice Black Pudding
    • 2 Eggs
    • 1 Slice Bread

    Instructions:

    Heat the flat grill plate over a low heat, on top of 2 rings/flames if it fits, and brush sparingly with light olive oil.
    Cook the sausages first. Add the sausages to the hot grill plate/the coolest part if there is one and allow to cook slowly for about 15-20 minutes, turning occasionally, until golden. After the first 10 minutes, increase the heat to medium before beginning to cook the other ingredients. If you are struggling for space, completely cook the sausages and keep hot on a plate in the oven.
    Snip a few small cuts into the fatty edge of the bacon. Place the bacon straight on to the grill plate and fry for 2-4 minutes each side or until your preferred crispiness is reached. Like the sausages, the cooked bacon can be kept hot on a plate in the oven.
    For the mushrooms, brush away any dirt using a pastry brush and trim the stalk level with the mushroom top. Season with salt and pepper and drizzle over a little olive oil. Place stalk-side up on the grill plate and cook for 1-2 minutes before turning and cooking for a further 3-4 minutes. Avoid moving the mushrooms too much while cooking, as this releases the natural juices, making them soggy.
    For the tomatoes, cut the tomatoes across the centre/or in half lengthways if using plum tomatoes , and with a small, sharp knife remove the green 'eye'. Season with salt and pepper and drizzle with a little olive oil. Place cut-side down on the grill plate and cook without moving for 2 minutes. Gently turn over and season again. Cook for a further 2-3 minutes until tender but still holding their shape.
    For the black pudding, cut the black pudding into 3-4 slices and remove the skin. Place on the grill plate and cook for 1½-2 minutes each side until slightly crispy.
    For 'proper' fried bread it's best to cook it in a separate pan. Ideally, use bread that is a couple of days old. Heat a frying pan to a medium heat and cover the base with oil. Add the bread and cook for 2-3 minutes each side until crispy and golden. If the pan becomes too dry, add a little more oil. For a richer flavour, add a knob of butter after you turn the slice.
    For the fried eggs, break the egg straight into the pan with the fried bread and leave for 30 seconds. Add a good knob of butter and lightly splash/baste the egg with the butter when melted. Cook to your preferred stage, season and gently remove with a fish slice.
    Once all the ingredients are cooked, serve on warm plates and enjoy straight away with a good squeeze of tomato ketchup or brown sauce.

    • 1 whole Chicken
    • 2 quarts neutral frying Oil
    • 1 Egg White
    • 1 1/2 cups Flour
    • 1 tablespoon Brown Sugar
    • 1 tablespoon Salt
    • 1 tablespoon paprika
    • 2 teaspoons onion salt
    • 1 teaspoon chili powder
    • 1 teaspoon black pepper
    • 1/2 teaspoon celery salt
    • 1/2 teaspoon sage
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon allspice
    • 1/2 teaspoon oregano
    • 1/2 teaspoon basil
    • 1/2 teaspoon marjoram

    Instructions:

    Preheat fryer to 350°F. Thoroughly mix together all the spice mix ingredients.
    Combine spice mix with flour, brown sugar and salt.
    Dip chicken pieces in egg white to lightly coat them, then transfer to flour mixture. Turn a few times and make sure the flour mix is really stuck to the chicken. Repeat with all the chicken pieces.
    Let chicken pieces rest for 5 minutes so crust has a chance to dry a bit.
    Fry chicken in batches. Breasts and wings should take 12-14 minutes, and legs and thighs will need a few more minutes. Chicken pieces are done when a meat thermometer inserted into the thickest part reads 165°F.
    Let chicken drain on a few paper towels when it comes out of the fryer. Serve hot.

    • 100g Almonds
    • 180g Butter
    • 180g Muscovado Sugar
    • Zest of 1 Orange
    • 3 tbs Apricot Jam
    • 225g Plain Flour
    • 1 tsp Baking Powder
    • 3 Large Eggs
    • 100g Ground Almonds
    • 2 tbs Milk
    • 500g Dried Fruit
    • 100g Glace Cherry
    • 1 tbs Milk
    • 2 tsp Caster Sugar

    Instructions:

    Put the almonds into a small bowl and pour over boiling water to just cover. Leave for 5 mins then drain in a sieve and leave to dry.
    Preheat the oven to 180C/160 C fan/Gas Mark 4. Line a deep loose-based 20cm cake tin with baking parchment.
    Put the butter in a large bowl and beat well until soft. Add the sugar and beat until light and fluffy. Stir in the orange zest and apricot jam.
    Sieve together the flour and baking powder. Add the eggs to the creamed butter and sugar, a little at a time, beating well between each addition. If the mixture starts to curdle, stir in a little flour.
    Add the remaining flour and ground almonds and mix well. Mix in the milk and then add the dried fruit and cherries and mix gently together.
    Spoon the mixture into the prepared tin and spread level using the back of a spoon. Arrange the whole almonds close together in neat circles on the top of the cake. Bake in the oven for 45 mins.
    Lower the oven temperature to 160C/140 C fan/Gas Mark 3 and cook for a further 60–80 minutes. Check the cake after 50 minutes by inserting a wooden or metal skewer into the cake. When it’s done it should have just a few crumbs attached. Check every 10 minutes – it’s important not to overcook this cake so the centre will be a little soft.
    When cooked, remove the cake briefly from the oven, put the milk and sugar into a small pan and heat gently until the sugar has dissolved. Brush over the top of the cake and return the cake to the oven for 2-3 mins. Remove and allow the cake to cool in the tin. When quite cold remove from the tin and wrap in foil and keep for at least 2 days before cutting.

    • 200g Butter
    • 200g Muscovado Sugar
    • 200g Plain Flour
    • 4 Beaten Eggs
    • 50g Ground Almonds
    • 100ml Sherry
    • 85g Candied Peel
    • 85g Glace Cherry
    • 250g Raisins
    • 250g Currants
    • 100g Pecan Nuts
    • Grated zest of 1 Lemon
    • 1 ½ tbsp Mixed Spice
    • 1 ½ tbsp Rose water
    • 1/2 tsp Vanilla Extract
    • 1/2 tsp Baking Powder

    Instructions:

    Heat oven to 160C/fan 140C/gas 3. Line the base and sides of a 20 cm round, 7.5 cm deep cake tin. Beat the butter and sugar with an electric hand mixer for 1-2 mins until very creamy and pale in colour, scraping down the sides of the bowl half way through. Stir in a spoonful of the flour, then stir in the beaten egg and the rest of the flour alternately, a quarter at a time, beating well each time with a wooden spoon. Stir in the almonds.

    Mix in the sherry (the mix will look curdled), then add the peel, cherries, raisins, cherries, nuts, lemon zest, spice, rosewater and vanilla. Beat together to mix, then stir in the baking powder.

    Spoon mixture into the tin and smooth the top, making a slight dip in the centre. Bake for 30 mins, then lower temperature to 150C/fan 130C/gas 2 and bake a further 2-2¼ hrs, until a skewer insterted in the middle comes out clean. Leave to cool in the tin, then take out of the tin and peel off the lining paper. When completely cold, wrap well in cling film and foil to store until ready to decorate. The cake will keep for several months.

    • 300g Digestive Biscuits
    • 150g Butter
    • 400g Condensed Milk
    • 3 Egg Yolks
    • 4 Lime
    • 300ml Double Cream
    • 1 tbls Icing Sugar
    • to serve Lime

    Instructions:

    Heat the oven to 160C/fan 140C/gas 3. Whizz the biscuits to crumbs in a food processor (or put in a strong plastic bag and bash with a rolling pin). Mix with the melted butter and press into the base and up the sides of a 22cm loose-based tart tin. Bake in the oven for 10 minutes. Remove and cool.
    Put the egg yolks in a large bowl and whisk for a minute with electric beaters. Add the condensed milk and whisk for 3 minutes then add the zest and juice and whisk again for 3 minutes. Pour the filling into the cooled base then put back in the oven for 15 minutes. Cool then chill for at least 3 hours or overnight if you like.
    When you are ready to serve, carefully remove the pie from the tin and put on a serving plate. To decorate, softly whip together the cream and icing sugar. Dollop or pipe the cream onto the top of the pie and finish with extra lime zest.

    • 3 tsp Baking Powder
    • ½ tsp Salt
    • 1 beaten Egg
    • ¾ cup Milk
    • 3 tbs Oil
    • for frying Oil
    • garnish Icing Sugar

    Instructions:

    Sift together dry ingredients.
    Mix together wet ingredients and incorporate into dry. Stir until smooth.
    Drop by teaspoonfuls(no bigger) into hot oil (365 degrees, no hotter), turning after a few moments until golden brown on all sides.
    Remove and drain.
    Roll in cinnamon sugar while still warm and serve.

    • 225g Medjool dates
    • 175ml Boiling water
    • 1 tsp vanilla extract
    • 175g self-raising flour
    • 1 tsp bicarbonate of soda
    • 2 eggs
    • 85g butter
    • 140g demerara sugar
    • 2 tbsp black treacle
    • 100ml milk
    • 1 scoop ice cream
    • 175g muscovado sugar
    • 50g butter
    • 225ml double cream
    • 1 tbsp black treacle

    Instructions:

    Stone and chop the dates quite small, put them in a bowl, then pour the boiling water over. Leave for about 30 mins until cool and well-soaked, then mash a bit with a fork. Stir in the vanilla extract. Butter and flour seven mini pudding tins (each about 200ml/7fl oz) and sit them on a baking sheet. Heat oven to 180C/fan 160C/gas 4.
    While the dates are soaking, make the puddings. Mix the flour and bicarbonate of soda together and beat the eggs in a separate bowl. Beat the butter and sugar together in a large bowl for a few mins until slightly creamy (the mixture will be grainy from the sugar). Add the eggs a little at a time, beating well between additions. Beat in the black treacle then, using a large metal spoon, gently fold in one-third of the flour, then half the milk, being careful not to overbeat. Repeat until all the flour and milk is used. Stir the soaked dates into the pudding batter. The mix may look a little curdled at this point and will be like a soft, thick batter. Spoon it evenly between the tins and bake for 20-25 mins, until risen and firm.
    Meanwhile, put the sugar and butter for the sauce in a medium saucepan with half the cream. Bring to the boil over a medium heat, stirring all the time, until the sugar has completely dissolved. Stir in the black treacle, turn up the heat slightly and let the mixture bubble away for 2-3 mins until it is a rich toffee colour, stirring occasionally to make sure it doesn’t burn. Take the pan off the heat and beat in the rest of the cream.
    Remove the puddings from the oven. Leave in the tins for a few mins, then loosen them well from the sides of the tins with a small palette knife before turning them out. You can serve them now with the sauce drizzled over, but they’ll be even stickier if left for a day or two coated in the sauce. To do this, pour about half the sauce into one or two ovenproof serving dishes. Sit the upturned puddings on the sauce, then pour the rest of the sauce over them. Cover with a loose tent of foil so that the sauce doesn’t smudge (no need to chill).
    When ready to serve, heat oven to 180C/fan 160C/gas 4. Warm the puddings through, still covered, for 15-20 mins or until the sauce is bubbling. Serve them on their own, or with cream or custard.
